Critical Corrected During Inspection Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. OBSERVED SANITIZER TO BE AT 150 PPM IN 3-BAY SINK. RECOMMENDED CONCENTRATION FOR STERAMINE TABLETS IS 200-400 PPM. FACILITY HAS TEST STRIPS AVAILABLE AND WAS ABLE TO REMAKE SINK.

OBSERVED SHELVING HOLDING CLEAN UTENSILS ON 3-BAY SINK WALL TO HAVE A BUILDUP OF GREASE. TO PREVENT CONTAMINATION OF CLEAN ITEMS, STORAGE AREAS AND STORAGE CONTAINERS SHOULD BE CLEANED AS OFTEN AS IS NECESSARY TO PREVENT CONTAMINATION.

Equipment not approved by a recognized testing agency. OBSERVED TWO HOMESTYLE MICROWAVES IN THE FACILITY. WHEN THEY NO LONGER FUNCTION OR ARE NO LONGER SMOOTH AND EASILY CLEANABLE THEY MUST BE REPLACED WITH COMMERCIAL GRADE EQUIPMENT BEARING NSF OR EQUIVALENT SANITATION CERTIFICATION.
