Critical Repeat Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. The ice tea nozzles were soiled at the bar and kitchenette.

Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. In the walkin refrigerator the cottage cheese was 44F, heavy creme 44F, water melon 44F. In the prep walkin refrigerator the spaghetti squash was 42F the tomato soup was 42F. The creme brulle was 44F in the reach in on the line.

Critical Consumer is not properly advised of the risk of consuming raw or undercooked animal foods. The advisory and menu items it applies to are not asterisked.

Critical Corrected During Inspection Improper storage of poisonous or toxic materials. Chrome wheel cleaner is stored over film wrap in the dry storage area.

3717-1-03.4(K) / Reduced oxygen packaging without a variance- criteria.
Critical Improper packaging of food using reduced oxygen packaging without a variance. There are various raw proteins and vegetables that are ROP. There is no HACCP plan for these processes. Discontinue doing this until a HACCP plan is available to be reviewed.

Critical Conducting a special process without a required variance. There are soups that are cooked prior to them being placed in a package and the package being sealed. This requires a variance for this process. Discontinue this process until a variance with the Ohio Department of Health is issued.

Critical Warewashing machine not equipped with thermometer as specified. The thermometers are in a location on the dishwasher where they are able to be read easily. Correct in 12 months.

Critical Corrected During Inspection Improper temperature of wash solution in mechanical warewasher. The dishwasher at the bar wash temperature was 110F. It must be 120F. Use dishwasher in kitchen until repaired.

Corrected During Inspection Unapproved chemical sanitizer used on food contact surfaces. The wiping cloth solution had 100 ppm.

Corrected During Inspection In-use utensils improperly stored. The ice scoop for the ice in the bucket for the bar had its handle in the ice.

Equipment components are not intact, tight or properly adjusted. The ice machine door gaskets are torn. Replace gaskets.
