TO ENSURE THE SAFETY OF FOOD THE PERSON IN CHARGE SHOULD EXERCISE MANAGERIAL CONTROL OVER FSO AND DEMONSTRATE KNOWLEDGE BY HAVING NO CRITICAL VIOLATIONS DURING THE INSPECTION.

Critical Repeat Corrected During Inspection Handwashing sink not accessible. OBSERVED HANDWASHING SINK TO BE INACCESSIBLE ON THE FOODSERVICE LINE DUE TO BEING USED TO HOLD SANITIZER BUCKET WITH SOLUTION. TO PREVENT CROSSCONTAMINATION OF PATHOGENS THAT CAN LEAD TO FOODBORNE ILLNESS, THE HANDWASHING STATION SHOULD BE ACCESSIBLE AT ALL TIMES TO PROMOTE HANDWASHING.

Critical Ready-to-eat, TCS food not properly discarded when required. OBSERVED PORK BRISKET DATED FOR 7/28/2023 AND GARLIC MARINADE DATED FOR 7/26 TO BE IN WALK IN COOLER DURING THE INSPECTION. TO MINIMIZE THE GROWTH OF PATHOGENS THAT CAUSE FOODBORNE ILLNESS, THE PERSON IN CHARGE SHOULD DISCARD OR REMOVE PRODUCTS FROM SERVICE THAT ARE STORED ON THE PREMISES PAST THE LAST ALLOWABLE DAY OF DATE MARK FOR DISCARD.
