Critical Corrected During Inspection TCS foods not being cold held at the proper temperature.Pizza topping refrigerator had sausage at 55F, Alfredo sauce 56F, Marinara 73F, cheese 63F. Items were discarded according to policy.

Critical Repeat Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. The TCS food items that were not date marked and over 24 hours old and the items past 6 days were discarded.

Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. In the pizza refrigerator the sliced tomatoes, anchovies and clams had no date and were over 24 hours old. There was meat balls dated 8/8, sliced tomatoes no dates, clams no date in the upright refrigerator. In the walkin refrigerator the three cheese was dated 8/12, Meat balls dated 8/8, Caesar dressing 8/6, white sauce 8/3. These items were discarded.

Critical Direct connection between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed. Ice bin drain by the dishwasher extends into the floor drain. Need a physical air gap.

Corrected During Inspection In-use utensils improperly stored. Utensils were stored in sanitizer on the line.

Non-durable equipment observed. The ice bucket has chipped edges.
