Critical Corrected During Inspection Observed food that was not properly protected from contamination by separation, packaging, and segregation.OBSERVED RAW EGGS STORED OVER HOT DOGS IN THE REACH IN COOLER. OBSERVED RAW PORK SAUSAGE STORED NEXT TO SMOKED SAUSAGE.
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule. TO PREVENT THE GROWTH OF PATHOGENS THAT MAY CAUSE A FOODBORNE ILLNESS, RAW ANIMAL PRODUCTS SHALL BE STORED AWAY FROM READY TO EAT FOODS.

Observed outdoor refuse containers without tight fitting lids, doors, or covers.OBSERVED A TRASH RECEPTACLE (OUTSIDE ENTRANCE DOOR) FULL OR TRASH AND WITHOUT A COVER.
Receptacles and waste handling units for refuse, recyclables, or returnables used outside with materials containing food residue, shall be designed and constructed to have tight-fitting lids, doors, or covers.

Repeat Floors, walls, and/or ceilings were not smooth and easily cleanable. OBSERVED CRACKS/HOLES IN THE WALLS AND CEILING IN THE WAREHOUSE/STORAGE AREA.
Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris.OBSERVED SOILED FLOORS, WALLS, AND CEILINGS.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
3717-1-06.4(F) / Drying mops.
Observed mops being dried using an unapproved method.OBSERVED MOP PLACED IN A POSITION THAT SOILS THE WALL.
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.
