TO PREVENT CONTAMINATION, FOOD CONTACT SURFACES SHALL BE CLEAN TO SIGHT AND TOUCH. THE PERSON IN CHARGE IMMEDIATELY CLEANED AND SANITIZED THE CAN OPENER.
VI - TCS Food: TCS foods were not being held at the proper temperature. OBSERVED FALAFEL HELD AT 57 DEGREES F ON THE PREP LINE.TO LIMIT THE GROWTH OF PATHOGENS THAT MAY CAUSE A FOODBORNE ILLNESS, TCS FOODS SHALL BE HELD AT 41 DEGREES F OR BELOW IN COLD HOLDING. A NEW CONTAINER OF FALAFEL WAS PLACED ON THE PREP LINE AND STORED ABOVE THE RIM FILL LINE. THE PERSON IN CHARGE WAS INSTRUCTED TO COOL THE FALAFEL DOWN TO 41 DEGREES F WITHIN 4 HOURS OF PREPARATION.
