Corrected During Inspection Cutting blocks or boards cannot be effectively cleaned and sanitized. OBSERVED: TWO CUTTING BOARDS THAT WERE SEVERELY SCORED. PIC DISCARDED THEM.

Mops dried improperly. MOPS SHALL BE WASHED, RINSED, SANITIZED, AND ALLOW TO AIR DRY.
