THESE AREAS MUST BE CLEANED AND A LICENSED PEST CONTROL COMPANY MUST BE CONTACTED FOR SERVICE WITHIN THE WEEK.

PIC unable to demonstrate knowledge by having no critical violations. OBSERVED CRITICAL VIOLATIONS AT THE TIME OF INSPECTION. PERSON IN CHARGE MUST MAINTAIN OVERSIGHT OF OPERATION TO ENSURE THAT CRITICAL VIOLATIONS DO NOT OCCUR.

Food not properly protected from contamination by separation, packaging, and segregation. OBSERVED CONTAINERS OF FOOD STORED IN CABINET OF KITCHEN PREP REFRIGERATOR TO BE WITHOUT LIDS OR COVERS. TO PREVENT CONTAMINATION DUE TO THE UNIT'S GRATE-STYLE SHELVING, ALL ITEMS SHOULD BE STORED COVERED.

Follow-up inspection for 7/19/23 Risk Control meeting. Pest control operator has made additional visit. Documentation from each visit must be maintained on premises. Cleaning has increased but printed logs are not available. PIC is currently taking manager's level food safety course.
