Critical Chlorine sanitizing solution at incorrect temperature and/or concentration. Observed the chlorine sanitizing solution at 0 ppm in the low temp dish machine. To limit the growth of pathogens that may cause a foodborne illness, sanitizing solution shall meet the minimum requirements for effective sanitizing. Note: the operation shall not use the dish machine until it is in good working order. Food employees shall manually clean and sanitize food equipment in the three compartment sink.
