Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Raw sausage was stored over ready to eat food in the reach in refrigerator.

Critical Corrected During Inspection Improper cooling of TCS food. The pizza sauce was 105F after cooling for 2 hours. Need to use a rapid cool stick to cool the sauce.

3701-21-25(I) / Person in charge certification in food protection
FSO did not have a person in charge per shift with the person in charge certification in food protection.
