TO PREVENT THE GROWTH OF PATHOGENS THAT MAY LEAD TO A FOODBORNE ILLNESS, THE PIC (PERSON IN CHARGE) CORRECTED AT THE TIME OF INSPECTION BY RAPIDLY COOLING CHICKEN AND DOCUMENTING THE TIME OF THE COOLING PROCESS

MET WITH MANAGER REGARDING FOOD CONTAMINATION COMPLAINT. THE SANITARIAN REVIEWED THE FOLLOWING FOOD SAFETY TOPICS WITH THE MANAGER: HANDWASHING, GLOVE USE, CLEANING, SANITIZING, COOLING, FOOD STORAGE AND COOKING TEMPERATURES. DURING THE INVESTIGATION THE SANITARIAN DID NOT OBSERVE ANY CROSS CONTAMINATION VIOLATIONS. FOODS ARE RECEIVED FROM APPROVED SOURCES AND RECORDS ARE PROPERLY MAINTAINED, NOTE: THE PIC(PERSON IN CHARGE) PROVIDED DOCUMENTATION FOR PROOF OF PAYMENT OF FOOD LICENSE APPLICATION |
VI - TCS Food: Observed improper method for cooling TCS foods. OBSERVED COOKED CHICKEN STORED IN WALK IN COOLER NOT PROPERLY DOCUMENTED FOR TIME AND TEMPERATURE CONTROL. ALL TCS FOODS SHALL BE PROPERLY COOLED USING THE TWO STAGE COOLING METHOD TO MINIMIZE THE GROWTH OF BACTERIA AS THE TCS FOODS PASS THROUGH THE TEMPERATURE DANGER ZONE VII - P - Protection from Contamination: Foods are protected from physical and environmental contamination during storage, preparation, holding and display. OBSERVED FOOD STORED IN THE DRY STORAGE AREA WAS NOT COMPLETELY SEALED AFTER USE. THE PIC(PERSON N CHARGE) IMMEDIATELY RESEALED THE FOOD PRODUCT TO PROTECT FROM CONTAMINATION.
