CRITICAL CONTROL POINT INSPECTION
IV - P - Demonstration of Knowledge: The person in charge is Certified in Food Protection. CDPH observed staff employee with ODH certification.

VI - P - TCS Food: Observed a larger covered container of cooking BBQ ribs at 230°F which sanitarian informed by the Pic will be cut up, after an approximately fifteen minute of cool down. The container will then be immediately placed into the walk-in cooler to complete the 135°F to 70°F and within four hours from 70°F to 41°F. Sanitarian informed this is a good preventitve in preventing bacterial growth that can lead to foodborne illness as all cooked TCS foods shall be cooled within two hours from 135°F to 70°F and within four hours from 70°F to 41°F.

VI - P - TCS Food: Observed ready to eat TCS foods being properly date marked, and discarded when required. CDPH informed staff TCS foods being properly date marked, and discarded when required is a good preventitive in the growth of organisms which can cause a foodborne illness.
X - P - Chemical: Toxic materials are properly identified and stored.
