TO LIMIT THE GROWTH OF PATHOGENS THAT MAY CAUSE A FOODBORNE ILLNESS, TCS FOODS SHALL BE DATEMARKED IF HELD MORE THAN 24 HOURS AND USED WITHIN 7 DAYS OF THE PREPARATION DATE.

OBSERVED FOOD ITEMS STORED WITH PROTECTIVE COVERING DURING STORAGE AND IN COLD HOLDING. TO PREVENT PHYSICAL AND ENVIRONMENTAL CONTAMINATION, THE OPERATOR ENSURED THAT FOOD ITEMS WERE COVERED DURING STORAGE AND COLD HOLDING.

THE PULLED PORK IS PREPARED IN ADVANCE AND FROZEN. TO LIMIT THE GROWTH OF PATHOGENS THAT MAY CAUSE A FOODBORNE ILLNESS, TCS FOODS SHALL BE DATEMARKED WHEN PREPARED AND A USE BY DATE WHEN THAWED.
