OBSERVED RAW CHICKEN STORED NEXT TO ICE IN THE REACH IN FREEZER USED FOR DRINKS. OBSERVED RAW CHICKEN STORED OVER RAW LAMB. IN ORDER TO PREVENT CONTAMINATION, ALL ITEMS MUST BE STORED ACCORDING TO THEIR COOKING TEMPERATURES. THEREFORE, RAW CHICKEN SHOULD BE STORED AT THE BOTTOM OF A RACK OR COOLER WHILE LAMB AND DOUGH WOULD BE PLACED ON HIGHER RACKS. PIC MOVED ITEMS AT THE TIME OF THE INSPECTION.

I - Employee Health: Person in charge did not ensure that employees are informed of their responsibility to report information about their health. OBSERVED NO EMPLOYEE HEALTH POLICY. IN ORDER TO PREVENT THE SPREAD OF FOODBORNE ILLNESS, ALL EMPLOYEES MUST READ AND SIGN THE EMPLOYEE HEALTH POLICY WHICH CONTAINS THE COMMON FOODBORNE ILLNESS SYMPTOMS, THE 13 REPORTABLE DISEASES, AND A STATEMENT OF ACKNOWLEDGEMENT. THE PIC WAS EMAILED A COPY OF THE EMPLOYEE HEALTH POLICY.

VI - P - TCS Food: Observed hot foods being held at 135°F or above; cold foods being held at 41°F or below. OBSERVED RICE AT 154 AND 153 DEGREES F AND SLICED TOMATOS AT 41 DEGREES F.

VII - Protection from Contamination: Equipment food-contact surfaces and utensils were not being sanitized. OBSERVED NO SANITIZER IN THE FACILITY. IN ORDER TO PROPERLY SANITIZE FOOD CONTACT SURFACES AND UTENSILS, SANITIZER MUST BE AVAILABLE AT ALL TIMES. THE PIC WENT OUT TO PURCHASE BLEACH AT THE TIME OF THE INSPECTION.

III - P - Preventing Contamination by Hands: Food employees were not contacting exposed ready-to-eat foods with bare hands. OBSERVED THE FOOD EMPLOYEE WEARING GLOVES.
