In regards to the inspection and discussion of the newly installed ovens which is located in the basement of the food preparation area compliant findings at this time of inspection. in addition, a recently achieved newer floor was also recognized. Hot holding rice was observed at 159 degrees fahrenheit with cold holding slice tomatoes at 39 to 41 degrees fahrenheit indicating a good temperature control in tcs, (time control safety), food monitoring.
