OBSERVED THE THREE - COMPARTMENT SINK NOT AIR GAPPED IN THE RESTAURANT PREP AREA.TO PREVENT BACKFLOW FROM CONTAMINATING FOOD AND EQUIPMENT, AN INDIRECT CONNECTION (AIR-GAP) MUST EXIST BETWEEN THE DRAIN PIPE AND THE FLOOR DRAIN.
