TO EXERCISE MANAGERIAL CONTROL OVER THE FOOD SERVICE OPERATION, THE PERSON IN CHARGE (PIC) SHALL COMPLY WITH THE CODE BY HAVING NO CRITICAL VIOLATIONS DURING THE CURRENT INSPECTION. AT THE TIME OF THE INSPECTION, THE SANITARIAN INSTRUCTED THE PIC REGARDING THE CORRECTIVE ACTIONS NEEDED TO ENSURE NO CRITICAL VIOLATIONS OCCUR ON SUBSEQUENT INSPECTIONS.

TO PREVENT POSSIBLE CONTAMINATION THAT CAN LEAD TO FOODBORNE ILLNESS, READY-TO-EAT FOOD SUCH AS COOKED OX TAILS SHALL BE PROTECTED BY BEING STORED IN PACKAGES, COVERED CONTAINERS, OR WRAPPINGS. AT THE TIME OF THE INSPECTION, THE PIC COVERED THE READY-TO-EAT OX TAILS TRAY PROPERLY.

TO PREVENT FOOD FROM CROSS-CONTAMINATION THAT CAN LEAD TO FOODBORNE ILLNESS, RAW ANIMAL FOOD SUCH AS MARINATING CHICKEN SHALL BE SEPARATED DURING STORAGE FROM RAW SEAFOOD ACCORDING TO PROPER COOKING TEMPERATURES OF THE RAW FOODS. AT THE TIME OF THE INSPECTION THE PIC REORGANIZED THE FOODS IN THE WALK-IN COOLER.

TO PREVENT CONTAMINATION OF FOOD WITH POISONOUS AND TOXIC SUBSTANCES SUCH AS CLEANER, POISONOUS AND TOXIC MATERIALS SHALL BE STORED IN SUCH A WAY SO THAT THEY CANNOT CONTAMINATE FOOD, EQUIPMENT, UTENSILS, LINENS, SINGLE-SERVICE ARTICLES, AND SINGLE-USE ARTICLES. AT THE TIME OF THE INSPECTION, THE PIC REMOVED THE CLEANING MATERIALS FROM THE CLEAN UTENSILS RACK.

Working food containers not properly labeled. OBSERVED WORKING CONTAINERS SUCH AS SQUEEZE BOTTLES CONTAINING SAUCES MADE IN-HOUSE, STORED IN THE SERVICE LINE COLD HOLDING UNIT AND THROUGHOUT THE KITCHEN, WERE NOT LABELED.

Waste receptacles not covered properly. OBSERVED WASTE RECEPTACLES CONTAINING FOOD DEBRIS IN THE KITCHEN WERE NOT COVERED WHEN NOT IN USE.

Repeat Mops dried improperly. OBSERVED MOP NOT PLACED IN A POSITION THAT ALLOWS IT TO AIR DRY.
