3717-1-06.1(A) / Floors, walls, and ceilings.
Floors, walls, and/or ceilings not smooth and easily cleanable. Observed the following locations missing material: 1. A smaller wall area located under the dishwasher 2. Three wall tiles located by the lower portion near the dishwasher conveyor area. 3. A approimate 2' by 2' wall board discussed to beginning to lose it's durability to seal which is located underneath the handwashing sink by the warewashibng area. Repair to fully reseal the above observed locations.

Facility not maintained clean. Observed minor build-up on the floor below the warewashing equipment and on the exterior of the duct wrapping located in dry storage. remove the observed minor build-up from the floor below the warewashing equipment and from the exterior of the duct wrapping located in dry storage.

CRITICAL CONTROL POINT INSPECTION
IV - P - Demonstration of Knowledge: The person in charge is Certified in Food Protection. CDPH observed staff employee with ODH certification.
VI - TCS Food: Observed all TCS foods being held at the proper temperature. CDPH informed staff TCS foods held at a proper temperature in the danger zone is a good preventitive in the growth of organisms which can cause a foodborne illness. X - P - Chemical: Toxic materials are properly identified and stored.
III - P - Preventing Contamination by Hands: Food employees were not contacting exposed ready-to-eat foods with bare hands. CDPH informed staff the proper application of utensils and single-use gloves is a good preventitive in the potential cross-contamination which can cause a foodborne illness.
