I - P - Employee Health: The operation had an employee health policy on file. OBSERVED ALL EMPLOYEES HAVE AN EMPLOYEE HEALTH POLICY ON FILE. IN ORDER TO PREVENT THE SPREAD OF FOODBORNE ILLNESS, ALL EMPLOYEES MUST READ AND SIGN THE EMPLOYEE HEALTH POLICY WHICH CONTAINS THE COMMON FOODBORNE ILLNESS SYMPTOMS, THE 13 REPORTABLE DISEASES, AND A STATEMENT OF ACKNOWLEDGEMENT. ALL EMPLOYEE HEALTH POLICIES MUST BE KEPT ON FILE AT THE FACILITY AT ALL TIMES.

VI - TCS Food: Ready-to-eat, TCS food that had been date marked was not properly discarded when required. OBSERVED TOMATO JAM DATED 1/30 IN THE COOLER. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, PRIMARILY LISTERIA, ALL READY TO EAT TCS FOODS MUST BE DATEMARKED AND THEN DISCARDED WITHIN 7 DAYS OF PREPARATION. THE PIC DISCARDED THE TOMATO JAM AT THE TIME OF THE INSPECTION.

III - P - Preventing Contamination by Hands: Observed food employee washing hands when required. OBSERVED FOOD EMPLOYEES WASHING HANDS WHEN REQUIRED. IN ORDER TO PREVENT CONTAMINATION, ALL FOOD EMPLOYEES MUST WASH HANDS WHEN RE-ENTERING THE KITCHEN FROM BREAKS, WHEN CHANGING TASKS, OR AS NECESSARY.
