TO EXERCISE MANAGERIAL CONTROL OVER THE FOOD SERVICE OPERATION, IT IS MANDATORY THAT THE PERSON IN CHARGE (PIC) COMPLY WITH THE CODE BY HAVING NO CRITICAL VIOLATIONS DURING THE CURRENT INSPECTION. Critical Corrected During Inspection SANITARIAN OBSERVED DENTED #10 CANS OF FOOD. TO PREVENT THE INTEGRITY OF THE CONTENTS FROM BECOMING CONTAMINATED WITH A FOODBORNE ILLNESS (Clostridium botulinum). THE DAMAGED CAN GOODS MUST BE STORED WITH OTHER DAMAGED ITEMS AND OR DISCARDED DUE TO THE POSSIBLE EXPOSURE OF CONTAMINANTS, ALL DENTED CANS MUST BE REMOVED FROM USE. SANITARIAN INSTRUCTED THE PERSON IN CHARGE (PIC) TO NOT SERVE THESE FOOD ITEMS TO ANYONE.

Critical SANITARIAN OBSERVED THE CONDENSATE DRAIN LINE FOR THE WALK-IN COOLER WAS NOT PROPERLY AIR GAPPED. TO PREVENT BACKFLOW AND CONTAMINATION OF THE FOOD AND EQUIPMENT, IT IS MANDATORY THAT THE CONDENSATE AND DRAIN LINES SHALL BE AT LEAST ONE INCH ABOVE THE FLOOR DRAIN. SANITARIAN INSTRUCTED THE PERSON IN CHARGE (PIC) TO ENSURE THAT THE CONDENSATE AND DRAIN LINES ARE A MIMIMUM OF ONE INCH ABOVE THE FLOOR DRAIN.
