Critical Corrected During Inspection Hot water for mechanical sanitization is below required temperature. OBSERVED BAR GLASSWASHER TO REACH MAXIMUM TEMPERATURE OF 159F. ALTERNATE METHOD TO SANITIZE GLASSES IS AVAILABLE AT BAR 3-BAY SINK. MACHINE SHOULD NOT BE USED UNTIL 160F INTERNAL TEMPERATURE IS ACHIEVED DURING RINSE CYCLE.

Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. OBSERVED TWO 4 QTS OF CONDIMENTS DATEMARKED 7/23 AND 7/27 IN WALK-IN COOLER. AS THESE ITEMS ARE PAST THE 7 DAY HOLD TIME FOR HOUSEMADE TCS FOODS THEY MUST BE DISCARDED.

VI - TCS Food: Ready-to-eat, TCS food that had been date marked was not properly discarded when required. OBSERVED TCS CONDIMENTS HELD IN WALK-IN COOLER PAST 7 DATE DATE MARK.
VI - P - TCS Food: Observed hot foods being held at 135°F or above. OBSERVED SAUCES HELD IN HOT WELL TO BE OVER 135F.
