IN ORDER TO PREVENT CONTAMINATION, ALL FOOD CONTACT SURFACES SHALL BE CLEAN TO SIGHT AND TOUCH. THE FOOD EMPLOYEE WASHED, RINSED, AND SANITIZED THE KNIVES AT THE TIME OF THE INSPECTION.

Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. OBSERVED HAM, TURKEY AND CORNED BEEF WHICH WERE PAST THEIR DATEMARKS. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, ALL READY TO EAT TCS FOOD SHOULD BE DATEMARKED AND DISCARDED WITHIN 7 DAYS. THE DAY OF PREPARATION COUNTS AS THE 1ST DAY. THE ITEMS WERE CAPTURED ON A VOLUNTARY DESTRUCTION FORM AND THE ITEMS WERE DISCARDED.

Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. OBSERVED TWO COOLERS DID NOT HAVE TEMPERATURE GAUGES.
