Critical Repeat Date the last shellstock was sold or served was not recorded on the label. The last two tags did not have the date the last one was served on.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. The Waldorf salad dressing was 58F, Caesar dressing was 53F and the romaine lettuce was 51F at the salad station refrigerator. The items were discarded and unit no longer used.

Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. The ranch dressing was 43F and the mustard dill sauce was 44F in the traulsen refrigerator. Items were discarded.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. The ranch dressing, made in house, in the Traulsen refrigerator was over 24 hours old and not date marked. The mustard dill sauce, made in house, was over 24 hours old and not date marked.

3717-1-03.5(E) / Consumer advisory.
Critical Consumer is not properly advised of the risk of consuming raw or undercooked animal foods. On the menu in the bar, the advisory and menu items are not asterisked.

3717-1-07.1(A) / Poisonous or toxic materials: Storage: separation.
Critical Corrected During Inspection Improper storage of poisonous or toxic materials. The were two spray cans of cleaning agents stored on a shelf over the drain board where clean dishes were drying at the three compartment sink in the kitchen.

3717-1-03.4(J) / Variance Requirement
Critical Corrected During Inspection Conducting a special process without a required variance. Currently searing beef, cooling it then ROPing it. Discontinue practice until a variance is granted.

3717-1-03.4(K) / Reduced oxygen packaging without a variance- criteria.
Critical Corrected During Inspection Improper packaging of food using reduced oxygen packaging without a variance. There are packages of cheese that were ROPed 9/11/19. The rules only allow you to keep it 30 days without a variance. Discard the cheese.

3717-1-05.3(C) / Sewage and other liquid waste: Backflow prevention.
Critical Direct connection between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed. There is no air gap between the drain pipe and the recessed floor drain in the main kitchen.

3717-1-06.2(C) / Handwashing sinks - hand drying provision.
Corrected During Inspection No towels were available at the dishwasher handsink

3717-1-02.2(G) / Jewelry - prohibition.
Food employees wearing jewelry on arms or hands during food preparation. Observed several food employees who had a watch or bracelet on while working.

3717-1-04.8(E)(1) / Equipment, utensils, linens - storage.
Repeat Utensils are stored in a variety of directions in the kitchen. They must all be stored in one direction. There were clean utensils stored in a soiled container. Corrected on site.

3717-1-06.4(A) / Repairing.
Physical facilities not maintained in good repair. There is a gap between the ceiling tiles in the walkin refrigerator for the liquor.
