Critical Written procedures and plans are not maintained and implemented. There are no supplies available to follow the vomit and diarrhea policy.

Critical Person in charge did not ensure their employees are properly trained in food safety. When the person in charge was asked about how hot TCS food is maintained they said 70F.

3717-1-02.2 (C ) / Hands and arms: when to wash
Critical Corrected During Inspection Food employee(s) did not wash hands when required. Observed a food employee handle raw chicken with gloves on and then take the gloves on and handle plates to plate a dinner without washing their hands.

Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. There are packages of hotdogs and sausages that are ready to eat and not date marked. The soups and other foods that are ready to eat are not date marked. In the future the items will be discarded.

Corrected During Inspection In-use utensils improperly stored. A scoop was stored in a container of water.

Repeat Cutting blocks or boards cannot be effectively cleaned and sanitized. The wood cutting boards have deep cuts. Remove deep cuts.

Non-food contact surfaces of equipment are unclean. The inside the of the refrigerators are soiled.
