To control the growth of pathogens, refrigerated ready to eat TCS foods held for more than twenty-four hours shall be clearly date marked at the time of preparation and sold or discarded within seven days. The day of preparation counts as day one. The PIC voluntarily discarded the cooked mashed potatoes.
