Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. OBSERVED MAC AND CHEESE, YAMS, AND GREENS WITH NO DATEMARK IN THE WALK IN COOLER AND THE STAND UP ONE DOOR COOLER. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, ALL READY TO EAT TCS FOOD MUST BE DATEMARKED WITH THE DAY OF PREP AND DISCARDED WITHIN 7 DAYS. FOOD WAS DATEMARKED AT THE TIME OF THE INSPECTION.

FACILITY RECEIVED A COMPLAINT FOR METAL, PLASTIC, AND BONE IN FOOD AND FOUL SMELLS IN THE RESTAURANT.`
PICTURES RECEIVED OF FOOD PURCHASED WITH A FOIL/METAL PIECE IN THE ROLL.

NO SMELL DETECTED THROUGHOUT RESTAURANT EXCEPT FOOD THAT WAS COOKING AND A HEAVY GREASE SMELL.

PROCESS OF MAKING SOUL ROLLS WERE DISCUSSED. PICTURES WERE SHOWN OF THE ROLLS IN QUESTION. FACILITY STATED THEY DON'T USE TWISTY TIES AND ARE UNSURE WHAT THE METAL PIECE COULD BE. THE TYPES OF CONTAMINANTS WERE DISCUSSED AND EDUCATION WAS GIVEN TO THE PERSON IN CHARGE AND THEY WERE INSTRUCTED TO EDUCATE ALL FOOD EMPLOYEES REGARDING PHYSICAL CONTAMINANTS. THE GREENS DO CONTAIN BONE AND SO IT WAS ALSO DISCUSSED THAT BONE PIECES NEED TO BE DISCARDED WHEN ROLLS ARE PREPARED TO ORDER SO NO CHOKING HAZARDS EXIST. CLEANLINESS OF WORK SURFACES WAS ALSO DISCUSSED AS WAY TO AVOID CONTAMINATION OF FOOD WITH PHYSICAL CONTAMINANTS. SOUL ROLLS ARE MADE PER ORDER USING THE FOOD FROM THE HOT HOLDING UNIT. FOOD USED FOR ROLLS IN QUESTION HAVE ALREADY BEEN SOLD/DISCARDED.
VIOLATIONS REGARDING DATEMARKING WERE ISSUED AND CORRECTED AT THE TIME OF THE INSPECTION.
