Non-food contact surfaces of equipment are dirty. OBSERVED DEEP FREEZER - CHEST, UP-RIGHT FREEZER, COOLER, AND REAR FREEZER - THAT WERE DIRTY, WITH RESIDUE BUILD-UP. ALL OF THE SEALS WERE DIRTY. THE DEEP CHEST IN THE REAR APPEARED TO HAVE MOLD IN IT.
Nonfood-contact surfaces of equipment shall be kept clean. CORRECT BY: CLEANING ON A ROUTINE BASIS.

Observed accumulation of soil residue on nonfood-contact surfaces. OBSERVED DIRTY AND RUSTY BAKING RACKS STACKED ON THE STOVE.
Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Cleaned equipment and utensils, laundered linens, or single-service and single-use articles are not properly stored. OBSERVED BAKING RACKS STACK ON TOP OF STOVE.
Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be properly stored as described in this rule. TO PREVENT CONTAMINATION OF FOOD, FOOD-CONTACT SURFACES, EQUIPMENT, AND UTENSILS, CLEAN EQUIPMENT AND UTENSILS SHALL BE STORED IN A SELF-DRAINING POSITION THAT ALLOWS AIR DRYING AND COVERED OR INVERTED.
