Comments
If management wishes to hold TCS (perishable items) for sale at room temperature. An upgrade to a Risk Level 4 license would be required along with a written plan for using time as a temperature control. This would allow foods to be held for up to 4 hours unrefrigerated after which they must be discarded if not sold.
