3717-1-04.2(B)(4) / Manual warewashing - two compartment sink requirements.
Facility is using an unapproved two-compartment sink or the two-compartment sink is being used in an unauthorized manner.
Before a two-compartment sink is used, the license holder shall: have its use approved by the licensor; limit the number of kitchenware items cleaned and sanitized in the sink; limit warewashing to batch operations; make up the cleaning and sanitizing solutions immediately before use and drain them immediately after use; and use an approved detergent-sanitizer or a hot water sanitzation immersion step as described in this code. PROVIDE A DETERGENT SANITIZER FOR THE TWO COMPARTMENT SINK TO HAVE ON HAND IN THE EVENT ANY WAREWASHING TAKES PLACE.
3717-1-04.2(G)(2) / Food temperature measuring devices - measuring the temperature of thin foods.
A thermometer capable of accurately measuring the temperature of thin foods was not available.
To prevent foodborne illness, a food temperature measuring device with a suitable small-diameter probe shall be provided and readily accessible to measure the temperature of thin foods, such as meat patties or fish fillets.
3717-1-04.2(I) / Sanitizing solutions - testing devices.
There is no test kit available for measuring the concentration of the sanitizer.
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided. PROVIDE A TEST KIT FOR CHLORINE SANITIZER.
3717-1-04.4(F)(1) / Warewashing sinks - use limitation.
Observed employees washing hands in a warewashing sink.
A warewashing sink may not be used for handwashing as specified under paragraph (D) of rule 3717-1-02.2 of this code. PROVIDE A DEDICATED HAND SINK FOR THE KITCHEN.
3717-1-05.1(G) / Handwashing sinks-Number.
Observed inadequate number of handwashing sinks. NO HAND SINK CONVENIENTLY LOCATED FOR KITCHEN STAFF.
To ensure frequent and proper handwashing, at least one handwashing sink, a number of handwashing sinks necessary for their convenient use by employees in areas specified under paragraph (L) of this rule, and not fewer than the number of handwashing sinks required by the Ohio building code shall be provided.
