Critical OBSERVED THE PERSON IN CHARGE (PIC) HAD NOT IDENTIFIED THE MAJOR FOOD ALLERGENS. TO DEMONSTRATE KNOWLEDGE, THE PIC SHALL IDENTIFY THE MAJOR FOOD ALLERGENS (MILK, WHEAT, FISH, SOY, EGGS, PEANUTS, AND TREENUTS. THE SANITARIAN SUCCESSFULLY EDUCATED THE PIC.

Critical Corrected During Inspection OBSERVED COLD TCS FOODS SUCH AS VARIOUS CHEESES (9#), SLICED HAM (.25#), MILK (3GAL), CREAM CHEESE (4#), LIQUID EGGS (1QT.), YOGURT (2QTS.), SOUR CREAM (1.5QTS.) HEAVY CREAM (1.25QTS.), AND ALFREDO SAUCE (1C) WERE NOT MAINTAINED AT THE APPROPRIATE TEMPERATURE. TEMPERATURES RANGED FROM FORTY-SEVEN DEGREES FAHRENHEIT TO FIFTY-THREE DEGREES FAHRENHEIT. TO PREVENT THE GROWTH OF FOODBORNE PATHOGENS, COLD HELD TCS FOODS SHALL BE MAINTAINED AT A TEMPERATURE OF FORTY-ONE DEGREES FAHRENHEIT OR LESS. SANITARIAN INSTRUCTED THE PERSON IN CHARGE (PIC) TO DISCARD THESE FOODS. FURTHERMORE, SANITARIAN CAPTURED THE ACTIVITY ON THE VOLUNTARY DESTRUCTION FORM.

Non-durable equipment observed (OBSERVED COMMERCIAL REFRIGERATOR WAS AT FORTY-SEVEN POINT FOUR DEGREES FAHRENHEIT AND THE HANDLE ON THE DOOR WAS BROKEN GIVING IT SHARP EDGES).
