Critical Repeat Corrected During Inspection TCS foods not being hot held at the proper temperature. OBSERVED MAC AND CHEESE IN HOT HOLDING WAS 108 AND 116 DEGREES F. IN ORDER TO PREVENT PATHOGEN GROWTH, ALL TCS FOODS HOT HELD SHOULD BE HELD ABOVE 135 DEGREES F. PIC VOLUNTARILY DISCARDED THE MAC AND CHEESE.

Critical Repeat Corrected During Inspection TCS foods not being cold held at the proper temperature. OBSERVED TURKEY SLICES, HARDBOILED EGGS, AND YOGURT ON THE SALAD BAR WERE 45 DEGREES F OR ABOVE. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, ALL TCS FOODS SHOULD BE HELD BELOW 41 DEGREES IN COLD HOLDING. PIC VOLUNTARILY DISCARDED ITEMS OUT OF TEMP.

Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. OBSERVED OPENED LUNCH MEAT IN THE DELI CASE WITHOUT DATEMARKS. PIC INSTRUCTED A FOOD EMPLOYEE TO DATE ALL OPEN LUNCH MEAT LACKING A STICKER.

Utensils, thermometers, and/or pressure gauges not in good repair or calibrated. OBSERVED FOOD THERMOMETERS IN THE DELI WERE IN ICE WATER AND READ 0 OR CLOSE TO 0 DEGREES F.

Repeat Facility not maintained clean. OBSERVED BAKERY DEPARTMENT HAS SOILED WALLS AND THE PERIMETER AND AROUND LARGE EQUIPMENT NEEDS TO BE CLEANED. OBSERVED THE VENT IN THE BAKERY DEPARTMENT HAS SPREAD DUST ON TO THE ADJACENT CEILING TILES.
