Critical Corrected During Inspection Improper cooling of TCS food. OBSERVED CHICKEN HELD AT 74 DEGREES F AND COOLING IN THE PIZZA PREP COOLER. TCS FOODS SHALL BE RAPIDLY COOLED FROM 135-70 DEGREES F WITHIN 2 HOURS, AND FROM 70-41 DEGREES F WITHIN 4 HOURS.

WARNING: THIS PRODUCT HAS NOT BEEN PASTEURIZED AND, THEREFORE, MAY CONTAIN HARMFUL BACTERIA THAT CAN CAUSE SERIOUS ILLNESS IN CHILDREN, THE ELDERLY, AND PERSONS WITH WEAKENED IMMUNE SYSTEMS.
