III - P - Preventing Contamination by Hands: Observed food employee washing hands prior to donning single use gloves.
VI - P - TCS Food: Food employee was observed reheating foods for hot holding to 165°F within two hours.
VII - Protection from Contamination: Equipment food-contact surfaces or utensils are dirty.Observed knives on counter tops in the main kitchen has old food debris upon the blades.. To prevent growth of potential foodborne illness causing pathogens, food contact surfaces must be washed, rinsed, sanitized, and air dried every 4 hours while in use, and stored clean. Inspector instructed PIC to disassemble the deli slicer and wash, rinse, sanitize, and air dry all parts before using again.
