Critical Corrected During Inspection Hot water for mechanical sanitization is below required temperature. OBSERVED CMA DISH MACHINE TO REACH INTERNAL TEMPERATURE OF 150F DURING SANITIZING CYCLE. CALL WAS PLACED FOR SAME-DAY SERVICE AND TECHNICIAN ARRIVED DURING INSPECTION.

Corrected During Inspection Utensils and equipment contacting non-TCS foods not cleaned at required frequency. OBSERVED INTERIOR OF ICE MACHINE ABOVE CUBE FRAME TO HAVE BLACK BUILDUP. PIC CORRECTED VIOLATION BY CLEANING THE MACHINE DURING THE INSPECTION.
