Critical Corrected During Inspection TCS foods not being hot held at the proper temperature. OBSERVED RICE HOLDING AT 95 DEGREES F. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, ALL HOT HELD TCS FOOD SHOULD BE HELD AT 135 DEGREES OR ABOVE. PIC DISCARDED RICE AT THE TIME OF THE INSPECTION.

Equipment and utensils are not being air dried. OBSERVED DISHES WET NESTING ON THE DISHRACK. PLEASE LET DISHES AIR DRY BEFORE STACKING THEM.

III - P - Preventing Contamination by Hands: Observed food employee washing hands when required. OBSERVED AN EMPLOYEE WASHING THEIR HANDS WHEN CHANGING TASKS. IN ORDER TO PREVENT CONTAMINATION, ALL EMPLOYEES SHOULD WASH HANDS WHEN RETURNING FROM THE BATHROOM OR BREAK, WHEN CHANGING TASKS, OR AS NECESSARY.

VI - TCS Food: TCS foods were not being held at the proper temperature. OBSERVED RICE BEING HELD AT 95 DEGREES F. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, ALL HOT HELD TCS FOOD MUST BE 135 DEGREES F OR ABOVE. PIC VOLUNTARILY DISCARDED THE RICE AT THE TIME OF THE INSPECTION.

I - P - Employee Health: The operation had an employee health policy on file. OBSERVED AN EMPLOYEE HEALTH POLICY ON FILE IN EACH EMPLOYEES FOLDER. IN ORDER TO PREVENT THE SPREAD OF FOODBORNE ILLNESS, ALL EMPLOYEES MUST READ AND SIGN THE EMPLOYEE HEALTH POLICY.

X - P - Chemical: Toxic materials are properly identified and stored. ALL TOXIC CHEMICALS STORED IN A DESIGNATED AREA AWAY FROM FOOD, DISHWARE, AND UTENSILS.
