3717-1-03.4(F)(1) / Time/temperature controlled for safety food - hot and cold holding.
Critical Corrected During Inspection TCS foods were not being held at the proper temperature. OBSERVED THE CHEESE WAS PLACED IN A STORAGE COMPARTMENT ABOVE THE REACH IN COOLER
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less. THE ITEM WAS PLACED IN THE COOLER UNIT AT THE TIME OF INSPECTION. Correct By: 28-Dec-2015
3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Corrected During Inspection Handwashing sink is being used for purposes other than handwashing. OBSERVED TWO CLEANLING UTENSILS (WIRE BRUSHES) INSIDE OF THE HANDWASHING SINK.
To prevent contamination, a handwashing sink may not be used for purposes other than handwashing. THE ITEMS WERE REMOVED AT THE TIME OF INSPECTION. Correct By: 28-Dec-2015

3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Equipment and/or components are not maintained in good working order. OBSERVED A PUDDLE OF WATER ON THE FLOOR INSIDE OF THE REACH IN COOLER (KITCHEN).
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
3717-1-05.1(S)(2) / Plumbing system - maintained in good repair.
The plumbing system was not properly maintained. OBSERVED THAT THE PLUMBING SYSTEM FOR THE HANDWASHING SINK (KITCHEN) IS NOT IN USE AND THE COLD WATER FAUCET KNOB FOR THE THREE COMPARTMENT SINK (KITCHEN) IS OFF FROM THE UNIT.
A plumbing system shall be properly maintained. PROVIDE REPAIR ON BOTH UNITS TO ENSURE USAGE.
3717-1-06.1(A) / Floors, walls, and ceilings.
Floors, walls, and/or ceilings were not smooth and easily cleanable. OBSERVED THAT THE WALL AGAINST THE FRYER AND THE HANDWASHING SINK (DIRECTLY ACROSS FROM EACH OTHER) ARE IN DISREPAIR (PEELING PAINT AND DETERIORATING MATERIAL).
Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. REPAIR THE WALLS TO PREVENT POSSIBLE CONTAMINATION OF FOOD AND TO ENSURE HAND CLEANLINESS.
