3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Corrected During Inspection Observed improper storage of food items. OBSERVED A BOX OF COLLARD GREENS STORED ON THE GROUND OF THE WALK IN PRODUCE COOLER
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor. THE ITEM WAS PLACED ON TOP OF THE OTHER PACKAGES AT THE TIME OF INSPECTION. Correct By: 29-Oct-2015
3717-1-04.4(B) / Cutting surfaces.
The surfaces of cutting blocks or boards were severely scratched or scored and could not be effectively cleaned and sanitized. OBSERVED THE CUTTING BOARD IN THE MEAT DEPARTMENT WAS SEVERLY SCRATCHED.
Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.
3717-1-04.8(F) / Storage - prohibitions.
Cleaned and sanitized equipment, utensils, laundered linens, or single-service articles or single-use articles were stored in a prohibited area. OBSERVED STYROFOAM TRAYS PLACED ABOVE THE MEAT PREP TABLE WHERE MEAT DEBRIS WAS (OBSERVED) STAINED ON THE ITEMS AFTER MEAT WAS PREPARED.
Equipment, utensils, laundered linens, or single-service articles or single-use articles may not be stored in the areas specified under this rule where contamination might occur.
3717-1-05.1(C)(1) / Handwashing sink - required water temperature
Observed a handwashing sink without water at the required temperature. OBSERVED WATER WAS NOT AT THE REQUIRED TEMPERATURE (100 DEGREES FAHRENHEIT) IN THE SECOND FLOOR WOMEN'S RESTROOM.
To ensure proper cleaning of hands, a handwashing sink shall be equipped to provide water at a temperature of at least 100° F (thirty-eight degrees Celsius) through a mixing valve or combination faucet.
3717-1-05.4(H) / Toilet room receptacle - covered.
Observed no covered receptacle in women's restroom. OBSERVED THAT THERE WAS NO COVERED RECEPTACLE IN THE FIRST AND SECOND FLOOR WOMEN'S RESTROOMS.
A toilet room used by females shall be provided with a covered receptacle for sanitary napkins.
3717-1-06.2(C) / Handwashing sinks - hand drying provision.
Corrected During Inspection Observed no towels or hand drying device at the handwashing sink(s). OBSERVED THAT THERE WERE NO PAPER TOWELS AVAILABLE IN THE FIRST FLOOR MEN'S AND WOMEN'S RESTROOMS.
To prevent contamination by hands, each handwashing sink or group of adjacent handwashing sinks shall beprovided with: Individual, disposable towels; a continuous towel system that supplies the user with a clean towel; a heated-air hand drying device; or a hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures. THE RESTROOMS WERE RESTOCKED AT THE TIME OF INSPECTION. Correct By: 29-Oct-2015
