Critical Equipment food-contact surfaces or utensils are unclean. OBSERVED AN ACCUMULATION OF ENCRUSTED FOOD DEBRIS ON THE BLADE OF THE HEAVY DUTY CAN OPENER AND CATERING PANS. TO PREVENT CONTAMINATION OF FOOD, CONTACT SURFACES AND UTENSILS SHALL BE CLEAN TO SIGHT AND TOUCH. THE SANITARIAN INSTRUCTED THE PERSON IN CHARGE (PIC) TO CLEAN THE CAN OPENER AND THE CATERING PANS.
