Non-food contact surfaces of equipment are dirty. OBSERVED DEEP FREEZER - CHEST, UP-RIGHT FREEZER, COOLER, AND REAR FREEZER - THAT WERE DIRTY, WITH RESIDUE BUILD-UP. ALL OF THE SEALS WERE DIRTY. THE DEEP CHEST IN THE REAR APPEARED TO HAVE MOLD IN IT.
Nonfood-contact surfaces of equipment shall be kept clean. CORRECT BY: CLEANING ON A ROUTINE BASIS.

TO PREVENT CONTAMINATION OF FOOD, FOOD-CONTACT SURFACES, EQUIPMENT, AND UTENSILS, CLEAN EQUIPMENT AND UTENSILS SHALL BE STORED IN A SELF-DRAINING POSITION THAT ALLOWS AIR DRYING AND COVERED OR INVERTED.
