Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. OBSERVED CAN OPENER BLADE WAS SOILED. IN ORDER TO PREVENT CONTAMINATION, THE CAN OPENER BLADE SHOULD BE CLEANED ON A ROUTINE BASIS AND BE KEPT CLEAN TO SIGHT AND TOUCH. LINE COOK CLEANED CAN OPENER BLADE AT THE TIME OF THE INSPECTION.

Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. OBSERVED BLANCHED FRIES SITTING ON A RACK NEAR THE STOVE HOLDING AT 63 DEGREES F. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, ALL TCS FOODS MUST BE KEPT HOT ABOVE 135 DEGREES F OR COLD AT 41 DEGREES F OR BELOW. LINE COOK VOLUNTARILY DISCARDED FRIES.

Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. OBSERVED PARSLEY SOUR CREAM PAST THE DATE MARK. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, ALL TCS FOOD ITEMS MUST BE DATEMARKED AND DISCARDED WITHIN 7 DAYS. LINE COOK VOLUNTARILY DISCARDED SOUR CREAM.

Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. OBSERVED NO TEMP GAUGE IN THE WALK IN COOLER (BASEMENT)

3717-1-04.4(B) / Cutting surfaces.
Cutting blocks or boards cannot be effectively cleaned and sanitized. OBSERVED ALL CUTTING BOARDS ARE SCORED AND STAINED AND NO LONGER ABLE TO BE EFFECTIVELY SANITIZED.
