Critical Corrected During Inspection OBSERVED RAW POULTRY WAS NOT PROPERLY SEPARATED FROM RAW VEGETABLES. TO PREVENT CROSS CONTAMINTION THAT CAN CAUSE A FOODBORNE ILLNESS, THE RAW POULTRY MUST BE PROPERLY SEPARATED THE RAW VEGETABLES. THE SANITIARIAN INSTRUCTED THE PIC TO SEPARATE THE RAW POULTRY FROM THE RAW VEGETABLES.

Critical OBSERVED SMALL DIAMETER PROBE THERMOMETER (SDPT) WAS WAS UNABLE TO BE PROPERLY CALIBRATED. TO ENSURE DUALLY SCALED SDPT READ ACCURATELY, SDPT MUST BE CALIBRATED TO WITHIN ONE DEGREE PLUS OR MINUS THIRTY-TWO DEGREES FAHRENHEIT FOR ICE POINT METHOD OR TWO HUNDRED AND TWELVE DEGREES FAHRENHEIT FOR BOILING POINT METHOD. SANITARIAN INSTRUCTED THE PERSON IN CHARGE (PIC) TO HAVE ICE AVAILABLE TO PROPERLY CALIBRATE THE THERMOMETER.
