3717-1-04.2(G)(1) / Food temperature measuring devices - availability
A food thermometer was not readily accessible. OBSERVED THAT THERE WAS NO SINGLE PROBE FOOD THERMOMETER AVAILABLE.
To prevent foodborne illness, food temperature measuring devices shall be provided and readily accessible for use. PROVIDE A SINGLE PROBE THERMOMETER TO VERIFY FOOD AND SANITIZER TEMPERATURES.
3717-1-04.2(I) / Sanitizing solutions - testing devices.
There is no test kit available for measuring the concentration of the sanitizer. OBSERVED THAT THERE WAS NO SANITIZER TEST KIT AVAILABLE.
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided. PROVIDE A TEST KIT TO VERIFY THE SANITIZER CONCENTRATION.
3717-1-04.8(F) / Storage - prohibitions.
Cleaned and sanitized equipment, utensils, laundered linens, or single-service articles or single-use articles were stored in a prohibited area. SINGLE SERVICE ALUMINUM PANS WERE STORED THREE SHELVES BELOW CHEMICALS (PEST SPRAY) IN THE RETAIL AREA.
Equipment, utensils, laundered linens, or single-service articles or single-use articles may not be stored in the areas specified under this rule where contamination might occur.
3717-1-05.1(S)(2) / Plumbing system - maintained in good repair.
The plumbing system was not properly maintained. OBSERVED THAT THE HOT SIDE OF THE MOP SINK DOES NOT TURN ON AT THE FAUCET, THE THREE COMPARTMENT SINK FAUCET IS LEAKING, AND THE RESTROOM SINK FAUCET IS NOT BOLTED DOWN TIGHTLY.
A plumbing system shall be properly maintained. REPAIR THE ABOVE MENTIONED ITEMS.
3717-1-06.1(C) / Floor and wall junctures - coved, and enclosed or sealed.
Repeat The floor and wall junctures are not properly coved or closed, or floor drains were not provided. OBSERVED THAT THE DRAINAGE CAP IN THE RESTROOM AND THE WALK IN COOLER (THE COVER NEAREST TO THE EXIT DOOR) FLOOR ARE BOTH BROKEN AND THERE IS A HOLE ON THE RETAIL FLOOR IN FRONT OF THE CHECK OUT COUNTER.
In FSO's or RFE's in which cleaning methods other than water flushing are used for cleaning floors, the floor and wall junctures shall be coved and closed to no larger than one thirty-second inch; where water flush cleaning methods are used, shall be provided with drains and be graded to drain, and the floor and wall junctures shall be coved and sealed. ENSURE THAT THE ABOVE MENTIONED ITEMS ARE PROPERLY COVERED OR CLOSED.
3717-1-06.1(I) / Light bulbs - protective shielding.
Observed light bulbs or heat lamp that were not properly shielded or coated where required. MISSING LIGHT SHIELD COVERS IN THE WALK IN COOLER.
Light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, or linens, or unwrapped single-service or single-use articles and does not apply in areas used only for storing food in unopened packages. An infrared or other heat lamp shall be protected against breakage by a shield surrounding and extending beyond the bulb so that only the face of the bulb is exposed.
