AT THE TIME OF THE INSPECTION THE PIC CLEARED THE ITEMS BLOCKING ACCESS TO THE HANDWASHING SINK.

OBSERVED QUATERNARY AMMONIUM CONCENTRATION IN SANITIZING COMPARTMENT OF THE THREE-COMPARTMENT SINK SHOWED LESS THAN 100 PPM AS MEASURED WITH TEST STRIPS. TO EFFECTIVELY SANITIZE FOOD CONTACT SURFACES OF EQUIPMENT AND UTENSILS, QUATERNARY AMMONIUM SANITIZER CONCENTRATION SHALL BE BETWEEN 200-400 PPM AS MEASURED WITH TEST STRIPS. AT THE TIME OF THE INSPECTION, THE SANITARIAN INSTRUCTED THE PIC TO PROVIDE SANITIZER SOLUTION AT THE SPECIFIED LEVEL AND MONITOR THE SANITIZER CONCENTRATION DAILY.

Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. OBSERVED ALUMINUM TRAYS USED FOR REHEATING LUNCHES WERE LITTERED WITH FOOD DEBRIS. TO PREVENT CROSS-CONTAMINATION, THE FOOD-CONTACT SURFACES OF UTENSILS MUST BE CLEAN TO SIGHT AND TOUCH. THE PIC STARTED TO CLEAN AND DISINFECT THE ALUMINUM TRAYS DURING THE INSPECTION.
