Corrected During Inspection Facility conducting a process without required variance from the ODA/ODH. OBSERVED THE OPERATION ENGAGING IN A SPECIALIZED PROCESS (MAKING YOGURT). THE OPERATOR BOILS WATER AND MILK AND LET IT COOL AT ROOM TEMPERATURE FOR MORE THAN 5 HOURS. THEN PLACE THE 5 GALLON CONTAINER OF YOGURT IN THE REACH IN COOLER ONCE IT THICKENS. THE OPERATION SHALL OBTAIN AN APPROVED VARIANCE FROM THE OHIO DEPARTMENT OF HEALTH BEFORE ENGAGING IN SPECIALIZED PROCESSES.
