Critical Corrected During Inspection OBSERVED QUATERNARY SANITIZER CONCENTRATION IN THE THREE COMPARTMENT SINK WAS AT*** 100ppm. TO EFFECTIVELY SANITIZE FOOD CONTACT SURFACES OF EQUIPMENT AND UTENSILS, SANITIZER CONCENTRATIONS SHALL BE IN ACCORDANCE WITH THE MANUFACTURER'S SPECIFICATIONS (200 – 400ppm). THE SANITARIAN INSTRUCTED THE PIC TO PROVIDE THE SANITIZER AT THE SPECIFIED LEVEL.

Critical OBSERVED THE CULINARY SINK OPPOSITE THE SODA FOUNTAIN WAS NOT PROPERLY AIR GAPPED. TO PREVENT BACKFLOW AND CONTAMINATION OF THE FOOD AND EQUIPMENT, THE DRAIN LINE SHALL BE AT LEAST ONE INCH ABOVE THE FLOOR DRAIN. SANITARIAN INSTRUCTED THE PERSON IN CHARGE (PIC) TO ENSURE THAT THE DRAIN LINE IS ONE INCH ABOVE THE FLOOR DRAIN.
