IN ORDER TO PREVENT CRITICAL VIOLATIONS, THE PIC SHOULD MAINTAIN MANAGERIAL CONTROL OVER THE FACILITY AT ALL TIMES. PIC SHOULD CORRECT ALL CRITICAL VIOLATIONS WITHIN 72 HOURS.

Critical Food not properly protected from contamination by separation, packaging, and segregation. OBSERVED LUNCH MEAT WITH NO PROTECTION FROM CONTAMINATION FROM THE COOLER. LUNCH MEAT IS STORED UNWRAPPED IN A TWO DOOR COOLER. IN ORDER TO PREVENT CONTAMINATION, ALL LUNCH MEAT SHOULD BE PACKAGED CORRECTLY WITH CERAN WRAP OR ANOTHER FOOD GRADE CONTAINER. FOOD EMPLOYEE INSTRUCTED THAT THE LUNCH MEAT NEEDS TO BE WRAPPED BEFORE BEING PLACED BACK IN THE COOLER.
