Comments
After conducting a Complaint inspection regarding ready to eat smoke chicken that was served raw. I observed the smoked ready to eat chicken placed in a reach in cooler on the same shelf as ready to eat foods in a bag with a label that indicates to reheat to 165 F before eating. As i continued to ask the person in charge about the food item she stated that yes the smoked chicken is ready to eat. We than opened a bag of chicken up and i observed red liquid i asked what is this and the person in charge stated it was seasoning and paprika. We then cut the whole chicken in half and i observed red on the inside. I then asked for a temperature long to see what the chicken has been cooked to. the person in charge was unable to verify the temperature. So she called the owner and the owner said that the smoke ready to eat chicken is not fully cooked that is why the label on the package indicates to reheat to 165 Degrees F before eating. So removed all the chicken in the reach in and placed them on the bottom shelf with the raw items.
