Critical Repeat Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. OBSERVED A BUILD UP OF DEBRIS ON THE FOLLOWING FOOD CONTACT SURFACES: 1) CAN OPENER 2) MEAT SLICER 3) MEAT FORK USED FOR THE CORNED BEEF TO PREVENT THE GROWTH OF PATHOGENS THAT MAY CAUSE A FOODBORNE ILLNESS, FOOD CONTACT SURFACES SHALL BE CLEAN TO SIGHT AND TOUCH.

Critical Corrected During Inspection Improper cooling of TCS food. THE LEFTOVER GYRO CONE WAS COOLED IN THE WALK IN COOLER. ANY CONE LEFT MUST BE SLICED, FULLY COOKED AND PROPERLY COOLED. TCS FOODS SHALL BE RAPIDLY COOLED USING THE TWO STAGE COOLING METHOD: FROM 135-70 DEGREES F WITHIN 2 HOURS, THEN FROM 70-41 DEGREES F WITHIN 4 HOURS.
