TO PREVENT FOOD FROM CROSS-CONTAMINATION THAT CAN LEAD TO FOODBORNE ILLNESS, RAW FOOD SUCH AS RAW SHELL EGGS SHALL BE SEPARATED DURING STORAGE FROM READY-TO-EAT TCS FOOD.
