OBSERVED FOOD SUCH AS NACHO CHEESE, BEEF, CHICKEN, AND STEAK WERE IMPROPERLY COOLED AND HOLDING AT 42-54 DEGREES AT THE TIME OF THE INSPECTION. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, ALL TCS FOOD SHOULD BE PROPERLY COOLED USING THE TWO STEP COOLING PROCESS. PIC ENCOURAGED TO KEEP TEMP LOGS. Physical facilities not maintained in good repair. OBSERVED THE ELECTRICAL BOARD UNDERNEATH THE HOOD IS NOT WORKING AND ALLOWING FOR LIGHT ABOVE THE FRYER. OBSERVED A MISSING HVAC VENT.

FACILITY RECEIVED TWO COMPLAINTS:
1) MOLD IN VARIOUS PLACES IN THE ESTABLISHMENT. NO MOLD WAS FOUND BUT THE FACILITY NEEDS TO CLEAN THE GROUT AND COVING IN THE FACILITY USING DEEP CLEANING METHODS. OBSERVED GREASE/GRIME BUILD UP.

2) FACILITY HAS FOOD DROPPING INTO FOOD ON THE LINE FROM ABOVE. DID NOT OBSERVED FALLING FOOD DURING SERVICE ON THE LINE. FACILITY IS NOT HOLDING FOOD COLD ON THE LINE. PIC STATED THE LINE COOLER WAS JUST REPAIRED AND ALL FOOD TEMPED ON THE LINE WAS AT THE PROPER TEMPERATURE.
III - P - Preventing Contamination by Hands: Observed food employee washing hands when required. OBSERVED A FOOD EMPLOYEE WASHING THEIR HANDS WHEN CHANGING TASKS.

VI - TCS Food: TCS foods were not cooled using the proper time and temperature parameters. OBSERVED BEEF, STEAK, CHICKEN, AND NACHO CHEESE IN THE WALK IN COOLER AT 42-54 DEGREES F. IN ORDER TO PREVENT THE GROWTH OF PATHOGENS, ALL TCS FOOD SHOULD BE COOLED USING THE TWO STAGE COOLING PROCESS. PIC DISCARDED FOOD AT THE TIME OF THE INSPECTION.

VII - Protection from Contamination: Equipment food-contact surfaces or utensils are dirty. OBSERVED ICE TEA NOZZLES ARE SOILED. IN ORDER TO PREVENT CONTAMINATION, THE ICE TEA NOZZLES SHOULD BE CLEANED DAILY. PIC INSTRUCTED TO CLEAN NOZZLES.
